Instructions
  1. Preheat grill to medium heat - approximately 350°.
  2. Mix warm water and salt in a gallon size bag until the salt is dissolved. Add vinegar, brown sugar, ice cubes, and pork to bag. Brine for 20 minutes. Do not brine too long.
  3. Pat dry the pork loin and then rub the loin with the olive oil followed by RUB1OUT Pork Rub.
  4. Place pork loin on grill and cook each side for approximately 6 minutes. The internal temperature should reach 135°. Evenly coat the pork with the glaze. Then, cook for an additional 5 minutes. Remove the pork, slice, and serve on a platter with extra glaze.
Blackberry Glaze
  1. Melt butter in a saucepan at medium-high heat. Sauté garlic. Then, add blackberry preserves, brown sugar, and ¾ cup of wine. Stir together. Simmer 'til the mixture has been reduced in half.
  2. In a separate small bowl, mix corn starch and remaining wine to make a slurry. Pour corn starch mixture into the blackberry mix, stir, and cook for 5 minutes (or until glaze has thickened).
  3. Set aside half of glaze and keep warm for serving.
